Continuing on the Marcella theme this week we made her Roast Chicken with Lemons. In this recipe she seals 2 Meyer lemons in the chickens cavity in an attempt to impart flavor throughout the chicken. I had one regular lemon which I poked with many holes and placed in the cavity, I also could probably could have done a better job sealing up the cavity. The idea is that if the cavity is well sealed the chicken skin will swell up and crisp while the lemon flavors sink into the meat. In the end it was a good chicken, not great. I should try it again with Meyer lemons and a well sealed cavity.

Stats:
3 1/2# Bell and Evans Chicken
Salt & pepper with a lemon sealed in the cavity.
Start with oven at 350 deg, breast side down for 30 min. turn chicken continue at 350 for 30 min, finish at 450 for 20 – 25 minutes.
